3c milk (goat)
5 egg yolks
3/4c erythritol
1/4 tsp stevia
1/2c cocoa powder
3/4tsp xanthan gum
1/8tsp salt
Place everything in the blender until thickened. Honestly, I used the xanthan gum as a thickener cause I didn't want to cook the custard. I feel pretty safe with my eggs cause we raise them here but if you buy them omit the xanthan and cook as a custard. Then add to ice cream maker.
When it was almost done I added 2tbls of rum and let it mix for abt 20 more minutes. The alcohol serves as a softener once the ice cream is in the freezer.
