Gluten-Free Buttermilk Biscuits

Gluten-free Buttermilk Biscuits by request 😅
2 C gluten-free flour (I make my own blend. See next post)
2 tsp baking powder
1tsp salt
1 1/2 tsp xanthan gum
*for cheddar biscuits add 1 C shredded cheese 
1/2 C butter or lard
2 eggs 
2/3 C buttermilk
 -Preheat oven to 400F
-Combine dry ingredients 
-Cut butter or lard into flour until it's in small crumbles throughout
-Mix eggs and milk and mix gently until completely combined.
NOTES:
If using lard the mixture will resemble more of a batter than a dough at first. DO NOT add more flour 😁. Just let it rest a few minutes and the dough will thicken and come together. 
-Turn out onto a floured surface and gently press it down to abt 3/4 inch and cut out. I've also just shaped them by hand and it works just as well. -Bake for 15-20 minutes
