High Altitude GF Chocolate chip cookies


These are High Altitude GF Chocolate chip cookies 💖😋.
Cookies are really picky about their altitude. When we moved here all my tried and true recipes were no good 😓. This recipe took me a bit to get but it's tried and true.
1C soft butter
1C white sugar 
1C brown sugar
3 eggs
1tsp vanilla 
1tsp baking soda 
1 1/2tsp xanthan gum
3 1/2C GF flour
1 1/2C chocolate chips .
-Preheat oven 350F
-In a large bowl stir together the butter, white and brown sugar until smooth. Mix eggs one at a time, then stir vanilla.
-Combine flour, baking soda, xanthan gum, and salt. Stir into batter until just blended, then mix in the chocolate chips. -Drop cookie dough by heaping tablespoonfuls onto greased cookie sheet. -Bake for 12-15 min until golden. 
This batter made 3 batches of 12 cookies for us. After the first batch I wrap the rest into a log and freeze. This way we have fresh cookies any time.
